Mixed vegetable tortellini

Mixed vegetable tortellini
This creamy tortellini and vegetable pasta is a real crowd pleaser. 
 

1 tbsp olive oil

3 cloves garlic, sliced

Handful each of, broccoli, carrots and sugar snap peas, chopped roughly

400g spinach and cheese tortellini

100g Parmesan cheese, grated

1 tbsp chopped fresh dill or chives (optional as garnish)

Lightly steam all of the vegetables until tender though retaining some crunch.

Heat the oil in a large pan and cook the garlic, stirring until translucent.

Add the steamed vegetables and mix to combine, reduce the heat to lowest setting.  

Cook the pasta according to the instructions, drain and combine with the vegetables.

Toss lightly adding in the parmesan then serve with a garnish of dill or chives if desired.
