Gnocchi with lemon and chive pesto

Gnocchi with lemon and chive pesto

1 garlic clove, finely chopped

Small bunch parsley, finely chopped

Small bunch chives, chopped

2 tbsp toasted pine nuts, roughly chopped

2 tbsp parmesan, or vegetarian alternative, plus extra for serving

Zest and juice of 1 lemon

4 tbsp olive oil

500g pack gnocchi

Add the garlic, herbs, pine nuts, cheese and lemon zest to a small bowl,lemon juice and olive oil.

Stir well and add seasoning if desired. Set aside.

Add the gnocchi to a pan of boiling water and cook according to instructions.

Drain and tip the gnocchi into a serving bowl and toss with the pesto.

Serve with extra grated Parmesan, if desired.
