1 x 400g tin chopped tomatoes
2 tbsp jalapeno peppers (optional)
1 lime, juiced
½ small red onion, finely chopped
Handful coriander, chopped
Plain tortilla chips
Strong cheddar, grated
Pour the tinned tomatoes into a sieve and shake to remove excess juice.
Add into a bowl and then tip in the chopped jalapenos and lime juice.
Mix in the chopped red onion and coriander.
Place the tortilla chips in a single layer on the base of a large ovenproof dish.
Scatter both the cheddar and mozzarella over the top and grill until the cheese is melted.
Add the salsa, sour cream and guacamole on top to serve.
