Vegetarian noodle stir-fry
This tasty recipe will leave your kids wanting seconds.

2 tsp olive oil

1 long red chilli, chopped

1 tsp grated ginger

2 tbsp peanut butter

2 tbsp soy sauce

125ml water

110ml coconut milk

2 tsp caster sugar

500g noodles

1 onion, sliced

1 red pepper, finely sliced

Half a head of cabbage, roughly chopped

1 garlic clove, minced

In a pot of water, cook your noodles according to packet instructions.  

While the noodles are cooking you can make the sauce. Heat the oil in a small saucepan and gently cook the chilli, onion and ginger for about 2 minutes.

Add the peanut butter, soy sauce, water, evaporated milk and sugar. Whisk until well combined and bring to the boil.

Add in the pepper, cabbage and garlic and cook for a further 4 minutes before adding in the cooked noodles. 

Combine well and pour in the satay sauce.
