 Five-spice noodles with mixed vegetables
Try this delicious Asian stir-fry lightly spiced and full of nutritious vegetables and nuts.

2 tbsp sunflower oil

2 chopped garlic cloves, finely sliced

1 large onion, finely chopped

2 tsp grated

Fresh root ginger

500g stir-fry vegetables

2 tbsp soy sauce

½ tsp five-spice powder

300g straight-to-wok Chinese noodles (in most larger supermarkets in Asian section)

125g roasted peanuts or cashew nuts

Heat a wok or frying pan with the sunflower oil.

Add the garlic, onion and the fresh root ginger.

Stir-fry for 2 minutes.

Add in the vegetables and stir-fry for 5 minutes.

Season the vegetables with soy sauce and the five-spice powder, then add in noodles and cook for 2 minutes, stirring well to combine.

When thoroughly heated through, top with roasted nuts and serve.
