Spaghetti puttanesca

 Spaghetti puttanesca
An easy pasta to make for the whole family and budget friendly.
 

400g spaghetti

1 tbsp olive oil

1 onion, sliced

1 garlic clove, crushed

2 tbsp capers, rinsed

1 x 400g tin chopped tomatoes

100g roasted peppers, chopped roughly

Handful of black olives, pitted and sliced thinly

Parmesan, to serve, optional

Cook the pasta according to the instructions.

Meanwhile, heat the oil in a large frying pan, then fry the onion over a medium heat for 5 minutes until soft.

Add the garlic and cook for 1 minute.

Add the capers to the pan with the tomatoes, peppers and olives.

Season to taste with salt and pepper then cook for a few minutes further until everything is heated through.

Drain the pasta and using a large serving bowl, tip in the pasta and add the sauce over then mix together well to thoroughly coat.

Serve immediately with lots of grated parmesan, if you like.
