Apple, parsnip and lentil soup
I've yet to meet a child who doesn't like this soup....even the most veggiephobic children seem to enjoy it.

50g red lentils

1 small onion

1 medium parsnip

1 small carrot

2 small eating apples

25g butter

1 tbsp oil

1 rounded tsp curry powder

500ml vegetable stock

1/2 tsp salt

A good grind of black pepper

To garnish:

6 tsp cream and chopped chives

Peel and chop, onion, carrot and parsnip roughly. Wash, quarter, core and chop apples. Heat butter and oil together in frying pan, sweat onion for 4 minutes. Add rest of the ingredients and seasonings. Stir, cover and simmer for 25-30 minutes until the lentils are tender. Purée the soup using a hand blender until smooth.  Reheat soup in the rinsed saucepan, adding 200ml of stock. Add more seasoning.

Garnish with a swirl of cream and some chives.
