Asian fish parcels
This easy Asian fish dish can be serve with steamed rice for a lovely low calorie supper.
 

4 plaice, haddock or other white fish fillets

2 pak choi, thickly sliced

4 spring onions, shredded

1 red chilli, thinly sliced

3cm ginger, cut into matchsticks

2 tbsp reduced-salt soy sauce

Juice 1 lime

1 tsp sesame oil

Rice to serve

Preheat the oven to 200°C / 400°F / Gas mark 6.

Prepare a baking tray and set aside.

Tear 4 large sheets of foil and place each fillet in the centre of each torn sheet.

Top with the pak choi, spring onions, chilli and ginger, then pull up the edges of the foil.

(Alternately, you can use 2 sheets and using 2 fillets, place the veg on top of one then add another fillet on top)

In a bowl, mix together the soya sauce, lime juice and 1 tablespoon of water then spoon a little over each fillet.

Crimp and fold the top of the foil to enclose the fish and make sure there are no gaps.

Place the parcels on the baking tray and bake for 10-15 minutes until the fish is cooked through. (The fish should easily flake away it its thickest point).

Open up the parcels and drizzle over a few drops of sesame oil.

Serve with steamed rice.
