Chocolate pear pudding
This pudding is absolutely delicious, you would never believe it contains only 140 calories and no saturated fat!

3 ripe pears

juice ½ lemon

1 tbsp light muscovado sugar

50g icing sugar

1 tbsp cocoa powder

25g ground almonds

1 egg white

Preheat oven to 140°C/280°F/gas 3.

Chop the pears into small chunks and tip into a saucepan with the lemon juice and sugar.

Bring to the boil, cover and cook for 10 minutes. Take the lid off and then cook for 8-10 minutes until the juices thicken.  

Divide mixture into 4 x 150ml ramekins.

To make the topping, sift the icing sugar and cocoa into a bowl and then stir in in the almonds.

Whisk the egg white until stiff, then fold into the dry ingredients.

Spoon the mixture over the pears.

Place in the oven to bake for 20-25 mins until the topping is firm to the touch.
