Aubergine and tomato sauce
Aubergines are an excellent source of dietary fibre and vitamins B1 and B6, so why not give this tasty pasta sauce a go.

1 tsp olive oil

1 onion, finely chopped

1 aubergine, chopped

I red pepper, sliced

1 tin (400g) tomatoes

Salt and freshly ground black pepper to season

Heat the oil in a sauce pan over a medium heat. Add the onion and sauté for about a minute.

Next, add the aubergine and peppers. Cook until the aubergine is a golden colour.

Add the tin of tomatoes and allow to simmer for 15 minutes. Season with the salt and pepper.

Serve over warm pasta.
