Avocado with hummus and feta sandwiches
One of the easiest combinations and simplest to make for a vegetarian crowd.
 

4 flour tortilla wraps

400g hummus

2 avocados, stoned and sliced

100g vegetarian feta cheese

Fresh coriander, to garnish

Lightly heat the tortillas by laying them over a very low flame on the hob and carefully turning them over using tongs until very lightly charred.

Spread each evenly with hummus.

Layer over with slices of avocado, crumble a little feta cheese on top then add the coriander.

Fold over and cut into halves then again if you wish to make 16 smaller slices.

Makes 8 halves or 16 smaller slices
