Smoked Salmon with Avocado & Lime with Brennans Wholewheat Brown Bread

75g cream cheese (full or low fat)
finely grated zest and juice of 1 lime
8 slices of Brennan’s Wholewheat Soda Bread
25g wild rocket
1 ripe avocado
100g smoked salmon slices
sea salt and freshly ground black pepper
Mix the cream cheese in a small bowl with the lime zest and a little salt and pepper to taste.
Spread this on one side of each of 8 slices of the bread and set 4 of the slices aside.
Arrange the rocket leaves on top.
Cut the avocado into quarters, discarding the stone and skin. Cut the flesh into slices and drizzle the lime juice over. Arrange the avocado slices on top of the rocket.
Lay the smoked salmon slices over.
Top each one with a reserved brown bread slice, cream cheese side down.
Either serve straight away or wrap up and keep chilled until ready to enjoy.
