Tuna & Roasted Red Pepper with Brennans Wholewheat Brown Bread

160g can tuna chunks, well drained
25g cheddar cheese, finely grated, (optional)
½ small red onion, finely chopped
½ roasted red pepper (from a jar is fine), finely chopped
4 tbsp mayonnaise
2 tsp Dijon mustard
1 tbsp finely chopped flat leaf parsley
25g butter, at room temperature (optional)
8 slices of Brennan’s Wholewheat Soda Bread
25g salad leaves
Sea salt and freshly ground black pepper
Mix the tuna chunks in a medium bowl with the cheese (if using), red onion, red pepper, mayonnaise, mustard and parsley until well combined. Season to taste with salt and pepper and set aside.
Spread the butter (if using) over one side of each of the bread slices.
Arrange the salad leaves over half of the bread slices.
Spoon and spread the tuna mix on top.
Top each one with a remaining bread slice, buttered side down.
Either serve straight away or wrap up and keep chilled until ready to enjoy.
