Bacon and tomato bake

Bacon and tomato bake
A traditional bake that the whole family will love.

500g fusilli pasta

4 tomatoes, chopped

100g mushrooms

5 bacon slices, diced

1 clove garlic, crushed

300g cheddar cheese, grated

360g mozzarella cheese

360ml sour cream

4 eggs, lightly beaten

3 shallots, sliced

Fresh basil leaves.

Preheat the oven to 180°C or gas mark 4.

Gently cook the pasta in a pot of lightly salted water. 

While the pasta is boiling, fry the bacon slices on a medium heat for 3 - 4 minutes on each side. Set aside.

Combine the pasta, bacon, tomatoes, mushrooms, cheddar cheese, garlic, sour cream, eggs and shallots together in a large bowl.

Spoon into a large baking dish and top with the mozzarella cheese.

Bake for 40 minutes.

Garnish with the basil leaves.
