Bacon, Lettuce & Tomato with Brennans Wholewheat Brown Bread

8 slices of Brennan’s Wholewheat Soda Bread
8 streaky bacon slices
4 tbsp mayonnaise
2 tsp Dijon mustard
8 little gem lettuce leaves
2 ripe tomatoes, sliced
1 ripe avocado
2 spring onions, finely sliced
freshly ground black pepper
Preheat the grill to high. Arrange the bread and bacon slices on the grill tray and grill them on each side until the bread is lightly toasted and the bacon crisp and golden. Remove and set aside to cool.
Meanwhile, stir the mayonnaise and dijon mustard together in a small bowl and season with freshly ground black pepper.
Spread this on one side of each of the toasted bread slices.
Arrange the lettuce leaves on four of the slices and lay the tomatoes slices on top.
Cut the avocado into quarters, discarding the stone and skin. Cut the flesh into slices and arrange them on top of the tomatoes.
Lay the crisp bacon slices on top and scatter the spring onion over.
Place a remaining toast slice on top of each, mayonnaise side down.
Either serve straight away or wrap up and keep chilled until ready to enjoy.
