Bacon tarts
These canapes are great for parties.

1 tsp butter

1 tsp olive oil

2 rashers, finely chopped

2 eggs

40ml cream

Pinch salt and pepper

1 tbsp flour

2 sheets ready rolled short crust pastry, thawed

Handful cheese, grated

Preheat oven to 180°C/ 350°F/ gas 4. Lightly grease a 12-hole cupcake tin with the butter.

Heat the oil in a frying pan and cook the rashers for about 4 minutes on either side. Remove from pan and cut into bite-sized pieces.

Beat the eggs together and pour in the cream. Season with salt and pepper and mix well.  

Roll the pastry about 1 cm thick. Lightly dust a glass tumbler with flour and use it to cut out 12 pastry circles.

Place the circles in the cupcake tin and mould them into the shapes using your fingers. Press the edges with a fork.

Pour in the egg mix and add the bacon on top. Sprinkle the cheese over it.

Place in the oven for 15 minutes and serve hot.
