Baked tofu wraps

Baked tofu wraps
Lovely fresh, vegan wrap. Makes extra baked tofu for sandwiches throughout the week.

2 ½ tbsp balsamic vinegar

2 tbsp soya sauce

1 tsp maple syrup

350g extra-firm tofu

150g lettuce

250g carrot, grated

3 scallions, chopped

2 tortillas

Preheat oven to 190°C/375°C/Gas 5.

Place the tofu into an ovenproof baking dish.

Pour over the balsamic vinegar, soya sauce and maple syrup.

Bake for 25 minutes.

Remove from the oven and leave to cool slightly before slicing.

Take one tortilla and place a handful of lettuce in the centre.

Add a layer of grated carrot, scatter some scallions over this.

Lay a few pieces of tofu along the top and drizzle with some of the marinade.

Slice and serve.
