Banana oat muffins
A healthy snack on the go!

3 ripe bananas, mashed

270g oats

75ml melted coconut oil

150g maple syrup

2 eggs

60ml almond milk

1 tsp baking soda

1 tsp vanilla extract

½ tsp salt

½ tsp cinnamon

Preheat the oven to 165°C/325°F/Gas3. Place 12 muffins cases in your muffin tin.

In a large bowl, combine the coconut oil, maple syrup, eggs, mashed bananas and almond milk. Then, add the oats, the baking soda, vanilla extract, salt and cinnamon and mix well. 

Spoon the batter into the muffin cases, about 2/3 full, then bake for 25 minutes, until a skewer inserted into a muffin comes out clean. Let cool and enjoy!
