Beetroot crisps
Most people pull a face when you mention this fine veg but it must be given a chance.
 

3-4 pre-cooked and skinned beets

Olive oil spray

Salt and pepper

Cayenne pepper (optional)

Preheat the oven to 140°C / 275°F / Gas mark 1.

Line 2 baking trays with greaseproof paper and set aside.

Slice the beetroot as thinly as possible.

Use the olive oil spray on the baking trays before laying out the sliced beetroot.

Season with salt and pepper. For a bit of added interest and spice, try a gentle sprinkle of cayenne pepper.

Bake in the oven for around 30 minutes depending on how thin you have cut them.  Testing one at 20 minutes is always a safe idea.

Turn your oven off and let them rest outside of the oven until you are ready to serve
