Beetroot energy balls by Annabel Karmel
Babies grow more rapidly in their first year than any other in their life and these balls will help to fuel their development and adventures!

100g cooked beetroot, chopped

100g porridge oats

100g soft dates

100g smooth peanut butter

15g cocoa powder

2 tbsp maple syrup (optional)

1 tsp pure vanilla extract

50g pecans

50g desiccated coconut

Put all the ingredients, except the coconut, into a food processor.

Add 3 tablespoons of water and whiz until finely chopped.

Shape the mixture into thirty balls.

Place the coconut in a bowl. Roll each ball in coconut.

Chill for 30 minutes in the fridge.

They will keep in an airtight container for up to 1 week.
