Breakfast taco
These breakfast tacos are packed with scrambled eggs, bacon, pepper and cheese. 
 

1 tsp olive oil

4 slices bacon

½ tbsp butter

1 tsp milk

5 eggs

Salt and pepper

2 tsp of hot sauce (optional)

4 tacos

1 tomato, cut

1 green pepper, roughly chopped

120g cheddar cheese, grated

Heat your oil in a frying pan on a medium temperature and fry your bacon for 5 minutes on each side.

Make sure it is nice and crispy before you take it out of the pan. Remove and leave to drain on kitchen towel before cutting into small slices.

While the bacon is cooking you can make the scrambled egg.

Beat the eggs together in a bowl. Heat the butter in a small saucepan on a medium temperature. Pour in the milk. Add in the egg and season with salt and pepper. Mix the ingredients together. Cook for about 5 minutes until the egg is scrambled.

Sweep a little of the hot sauce, if using, onto each taco. Layer on the scrambled egg, bacon, tomato, peppers and cheese.
