Butternut squash, pasta and pancetta

Butternut squash, pasta and pancetta
This dish is full of flavour and is particularly easy to make. The butternut squash makes a lovely addition to the dish - you'll wonder why you never used it like this before. 

1 medium butternut squash, cut into small cubes

3tbsp olive oil

350g pasta

6 slices pancetta

Fresh parsley to garnish

Preheat the oven to 200°C / 400°F / Gas mark 6. Line a baking tray with parchment paper.

Make sure the butternut is cut into cubes and toss with 2 tbsp of the oil in a small bowl.

Spoon onto the baking tray and place in the oven for about 10 minutes. Remove and leave in a large bowl.

While you are roasting the butternut squash cook the pasta according to packet instructions about 2 minutes. Drain and set aside.

Heat the rest of the oil on a medium temperature and cook the pancetta for about 5 minutes until slightly crispy.

Add the pancetta to the bowl of butternut squash and toss together.

Spoon the pasta onto a plate and top with the squash and pancetta mix.

Garnish with the parsley before serving.
