Butterscotch cookies

100g unsalted butter, at room temperature
100g light soft brown sugar
2 tbsp golden syrup
175g self-raising flour
25g Rice krispie cereal
Dark chocolate chips, for decoration
Heat oven to 160°C/320°F/gas 3.
In a bowl, mix the butter, sugar and golden syrup together with a beater until you have a smooth mixture.
Sieve the flour and then combine with the rice krispies.
Roll into small balls of dough and place on a greased baking tray.
Dot each ball with chocolate chips and bake for 15-20 minutes until golden.
Leave on the baking sheet for 1 minute before removing to a wire rack to cool.
