Cauliflower fried "rice"

This carb-free dish will make your family love cauliflower.
400g chicken breast, cooked
1 small head of cauliflower
4 eggs, beaten
100g frozen peas
1 onion, chopped
1 tbsp soy sauce
1 tbsp honey
1 red chilli, chopped, to serve
Cut the cauliflower into florets and put in a food processor. Pulse until it resembles rice.
In a frying pan, heat some vegetable oil, add the eggs and scramble. When cooked, set aside.
Add a tablespoon of oil to the pan on high heat. Add the onions and cook until translucent. Stir in the soy sauce, honey, cooked chicken and stir well. Add the cauliflower “rice” and fry for 3 minutes. Add the peas, stir and cook for another minute. Add the cooked eggs and combine well. Serve immediately with chopped red chilli to taste.
