Cheese and broccoli muffins
Muffins are a tempting treat for most children so why not try a savoury version to help with your child’s recommended 5-a-day! This recipe freezes really well so bake in batches and defrost for lunchboxes and snacks. 

6 cooked broccoli florets, chopped
6 cherry tomatoes, chopped
120g grated Cheddar cheese
230g self rising flour

180ml milk - use whole milk
3 tbsp olive oil
1 egg, beaten

Pre-heat the oven to 180°C.

In a bowl, mix together the flour, cheese and chopped broccoli.

Add the chopped tomatoes, milk, oil and egg and blend thoroughly.

Grease a 12-hole muffin tin and spoon in the batter.

Bake for 25 to 35 minutes until golden.
