Cheesy chicken bake

This is a great way to use up any vegetables you have lying around in the fridge.
4 medium chicken fillets, diced and cooked
350g penne pasta, cooked
1 jar of passata
1 tsp garlic powder
120g parmesan cheese, grated
2 tbsp olive oil
1 tsp basil
1 red pepper, finely sliced
100g button mushrooms
100g mozzarella cheese, diced
Preheat oven to 180°C or gas mark 4.
In a saucepan, gently cook the chicken on a medium heat in a little oil. While the chicken is frying you can boil the pasta until it is al dente.
Once cooked, combine the chicken with the pasta and add in the the passata, garlic powder, parmesan cheese, pepper, mushrooms and basil and mix thoroughly.
Spoon into an ovenproof dish and spread the mozzarella over the pasta mix.
Bake in the oven for 25 minutes.
