Chicken and chorizo pasta
This is a really simple pasta dish that will appeal to all the family.

300g penne pasta

1 tsp olive oil

150g chorizo

454g chicken breast, chopped

1 x 400g tin of chopped tomatoes

1 bunch of spring onions, chopped

1 tbsp sugar

1 medium orange, rind only, grated

Salt and freshly ground black pepper

Set a pot of water to boil, add a large pinch of salt and cook the penne pasta for approx. 12 minutes or until cooked.

Heat the oil in a frying pan on a medium heat. Cut the chorizo into thin rounds and gently fry until crispy on both sides.

Pour away the fat that runs off the chorizo. Add the chopped chicken to the pan and fry until sealed on all sides.

Add the tomatoes and stir well. Add the spring onions, sugar and the grated orange rind. Simmer for 10 minutes.

Season with salt and pepper.

Drain the pasta and top with the sauce.
