Chicken and fettuccine with an Alfredo sauce

The homemade Alfredo sauce really makes this simple chicken pasta dish a tasty treat.
300g fettuccine
1 tsp olive oil
2 chicken fillets, cut
40g butter
200ml pouring cream
Salt and pepper to season
30g Parmesan cheese
Handful spinach leaves
1 egg yolk
Cook your fettuccine according to packet instructions. Drain water and set aside.
Heat your oil in a saucepan, over a medium heat. Gently cook your chicken for 10 minutes until slightly brown.
In another saucepan, melt your butter and stir in your cream.
Combine the salt, pepper, parmesan and spinach.
Cook for a couple of minutes before adding your egg yolk.
Reduce heat and leave to simmer for 5 minutes.
Toss your chicken and pasta together before serving on a plate topped with your sauce.
