Chicken breasts with lemon and garlic

A simple and delicious chicken recipe
4 chicken breasts
50mls sunflower oil
Juice of 1 whole lemon, freshly squeezed
3 tbsp soy sauce
1 clove garlic, finely grated
Thumb sized piece of ginger, finely grated
Lay the chicken breasts between 2 large sheets of clingfilm. Pound the breasts flat with a rolling pin.
Combine lemon juice, sunflower oil, garlic, ginger and soy sauce in a bowl.
Marinate the chicken in the mixture for at least one hour.
Preheat grill, frying pan or griddle pan to a medium heat - do not add oil.
Remove chicken from marinade and place it on the prepared grill or pan. Discard remaining marinade.
Cook on each side for 5 minutes or until cooked through.
Serve with accompaniment of your choice
