Chicken fajita pasta

This hearty recipe is a perfect weeknight dinner
250g pasta (penne or farfalle)
450g chicken breast, diced
1 red pepper, diced
1 yellow pepper, diced
1 onion, finely chopped
3 cloves garlic, crushed
3 tbsp fajita mix
120ml cream
500ml chicken stock
1 can chopped tomato
Olive oil
Grated cheddar, to serve
Fresh coriander, to serve
Season the chicken with half of fajita seasoning. In a medium saucepan, heat some olive oil and cook the chicken, then set aside.
In the same saucepan, heat some more olive oil and add the onion, garlic and peppers and remaining fajita mix. Cook for 2 minutes, then add the stock, cream, chopped tomato and pasta. Bring to a boil, then reduce to a simmer, cover and cook for about 10 minutes, until the liquid is mostly absorbed. Add the chicken back to the saucepan and cook for a further 2 minutes.
Serve with grated cheddar and fresh chopped coriander.
