Chicken Pad Thai
This recipe for Pad Thai is from the fabulous Hungry Healthy Happy blog which is a site dedicated to healthy living. The blog features tips on healthy eating and exercise and is a wonderful resource for anyone trying to change their lifestyle for the better.

1 chicken breast, grilled and sliced
1 head of broccoli, cooked
2 garlic cloves, chopped
1 Tbsp honey
2 Tbsp nut butter (I used almond butter)
2 tsp olive oil or sesame oil
1 Tbsp chili sauce
1 Tbsp fish sauce
60ml water cup
1 red bell peppers, thinly sliced
170g noodles (I used buckwheat soba noodles), cooked and drained
4 spring onions/scallions, sliced
2 limes, quartered, for serving
1 tbsp chilli flakes

In a blender, combine the garlic, honey, almond butter, oil, chilli sauce, fish sauce and water and puree until smooth and set aside.

Heat a large pan and add the cooked chicken and pepper slices and cook for 2 minutes.

Add the sauce, cooked noodles and broccoli and cook for a further 2 minutes.

Serve with spring onions/scallions,  chilli flakes and lime wedges.
