Chicken quesadillas

These quesadillas are simple to make and perfect if your child comes home for lunch.
4 wraps
1/2 tin of refried beans
100g Green Farm Roast Chicken
40g light cheddar cheese, grated
Handful fresh coriander
1 spring onion
1 red pepper, sliced
1 green pepper, sliced
2 tomatoes, chopped
1 tsp olive oil
Place one wrap on a plate and using a spoon, spread 1 tbsp. of refried bean over the base of the wrap. Repeat on the rest of the wraps.
Sprinkle the chicken, cheese, coriander, sliced spring onion, peppers and tomatoes over one side of each wrap. Fold over.
Heat oil in a large frying pan and when it is hot, place your folded wrap in the pan, pressing down to seal the filling inside.
Carefully turn over and cook the other side until it is golden.
Repeat with the next wrap.
Cut in half and serve.
