Chicken sausage rolls
These chicken sausage rolls are tasty and have hidden vegetables inside. They are great to feed the family or cut into bite-size pieces for parties.

3 sheets ready rolled frozen puff pastry

1 carrot, peeled and sliced

2 courgettes, chopped

1 onion, finely chopped

500g chicken breast minced (mince chicken breasts in a food processor)

1 clove garlic, crushed

300g fresh breadcrumbs (approx. 8 slices of bread blitzed)

Salt and pepper

1 egg, lightly beated

80ml milk

Preheat the oven to 190°C/375°F/Gas 5 and line 2 baking trays with greaseproof paper and set aside.

Remove the pastry sheets from the freezer and pack, and allow to defrost.

Using the food processor, blitz the carrot first for a moment.  Add in the courgette and blitz again and then add the onion for final quick blitz.  Remove these vegetables from the food processor and set aside.

Next blitz the chicken breasts until they are finely minced.  Add the previously blitzed vegetables back in along with the garlic, breadcrumbs, salt and pepper and blitz until well combined.

In a small bowl, mix the milk with the egg to make an egg wash.

Cut the 3 pastry sheets in half and evenly distribute the chicken mix between the 6 pieces.

Roll the chicken mixture in the pastry and use some of the egg wash to seal it shut.

Cut each log into 3 for large sausage rolls or 6 for party sized sausage rolls.

Transfer the sausage rolls onto the baking trays and brush with the rest of the egg wash.

Bake in the preheated oven for 40-45 minutes.

Only use chicken breast mince for this recipe – if you mince other parts of the chicken, they have higher fat content and it will cause the bottom of the sausage rolls to go soggy.
You can make this recipe without a food processor. You will need to chop all of the vegetables very finely and either buy already minced chicken or turkey breast or chop it in teeny weeny pieces.  It can be done.
