Middle Eastern chicken wings
Cumin, garlic and lemon infuse these chicken wings, they are easy and perfect for a gathering.
 

12 chicken wings

2 garlic cloves, crushed

Zest and juice 1 lemon

1 tsp cumin seed

2 tbsp olive oil

1 tbsp honey

Fresh herbs of sorts such as basil and dill

Greek style yoghurt for dipping (optional)

Using a pair of sharp kitchen scissors or knife, cut each wing at the knuckle into two pieces.

Into a large dish, mix the garlic, lemon zest and juice, cumin and oil with plenty of salt and pepper then tip the chicken wings and toss well to coat.

Cover and put in the fridge to marinate for at least 1 hour, or overnight if you have time.

Preheat the oven to 200°C / 400°F / Gas mark 6.

Line a baking tray with greaseproof paper.

Arrange the chicken wings on the tray and bake for 45-50 minutes until crisp, drizzling over the honey for the final 10 minutes.

Serve on a platter with a scatter of herbs and some yoghurt for dipping.
