Chickpea burgers

800g cooked or canned chickpeas, drained

3 eggs

1 handful chopped coriander

1 handful chopped flat-leaf parsley

3 spring onions, finely chopped

1 heaped tsp, finely grated lemon zest

1 red chilli, finely chopped (seeds removed, if preferred)

120g whole meal breadcrumbs

3 tbsp extra virgin olive oil, plus extra for drizzling

1 tsp sea salt

Freshly ground black pepper

To serve

Greek yogurt

Paprika, for sprinkling

Lettuce leaves

Sliced red onions

Sliced tomatoes

Chilli sauce

8 whole meal burger buns (optional)

Process the chickpeas, eggs, salt and black pepper together in a food processor until smooth. Move into a large bowl then stir in the coriander, parsley, spring onions, lemon zest, chilli and breadcrumbs. Set aside for about 5 to 10 minutes.

With damp hands, form 8 large patties or 16 small ones.

Pour the oil into a large frying pan and set over medium-high heat. Add the first batch of burgers and brown on each side for about 3 or 4 minutes.

Place a few salad leaves on a large plate. Top with one patty, some tomato and onion slices and parsley. Serve with labne or yogurt dressed with olive oil and paprika and chilli sauce.

You can use these chickpea patties to make healthy vegetarian hamburgers. Warm the wholemeal buns under the grill then spread with labne or Greek yogurt. Lay the salad and tomato slices on the bottom halves, add the patties, red onions, parsley and chilli sauce. Cover with the top halves and serve.
