Chickpea & Courgette Bruschetta

Chickpea & Courgette Bruschetta

1 tin of chickpeas rinsed & drained

1 courgette split lengthways & finely diced

2 panini split lengthways & lightly toasted

Handful of fresh shavings of parmesan/ cheddar cheese

Handful of fresh baby spinach leaves / lettuce leaves

A little drizzle of olive or rapeseed oil

Jar of Janet’s Just Delicious Roast Red Pepper Sauce

Lightly sweat the diced courgettes in a little olive oil in a medium size frying pan.

Then add in the chick peas and the sauce.

Stir the mixture and heat through gently.

Drizzle a little oil on the toasted panini halves.

Pile on the chickpea and courgette sauce.  Scatter over the  parmesan shavings.

Serve with the fresh baby spinach leaves/ lettuce leaves

Simply delicious in 10 minutes!
