Chocolate flavour Apple Muffins
240g self raising flour
60g light olive oil
120g brown sugar
170ml milk
2 eggs
10g vanilla baking powder
40-50g unsweetened cocoa
1-2 Biosüdtirol apples
Preheat the oven to 180C
In a large bowl mix the sifted flour, baking powder, cocoa and brown sugar
In a second bowl beat the eggs, oil and milk with a whisk for a couple of minutes or as long as necessary to mix well all ingredients
Pour the liquid mixture into the bowl with the dry ingredients and mix for a few more seconds
Finally, add the apples cut into small pieces (keeping a few apple slices aside for decoration) and stir gently to incorporate them
Transfer the mixture into muffin tins lined with paper cups with the help of an ice cream scoop or spoon, then add a few apple slices to each muffin in a fan shape
Bake for about 15-20 minutes in a hot static oven at 180C
Remove from the oven and once cooled, sprinkle with icing sugar
