Cinnamon eggy bread soldiers

3 eggs

100ml double cream

100ml milk

1/2 tsp ground cinnamon

4 thick slices white bread

275g butter

300ml Greek yogurt

300g raisins

4 tbsp clear honey

In a bowl, beat together the eggs, cream, milk and cinnamon. Soak the 4 bread slices in this mixture then stack on a plate.

Put half of the butter into a large non-stick frying pan and heat over medium heat. Lay 2 of the slices inside the pan and fry until they get a nice golden colour, which should take about 2 to 3 minutes on each side. Brown the 2 other slices in the same way. Cut each bread slice into 5 strips.

Place the bread strips on a plate. Drop a large spoonful of Greek yogurt on the side then scatter the raisins on top. Dribble the honey over both the bread and the yogurt and serve.
