Courgette and aubergine stew

Courgette and aubergine stew
Serve this simple vegetable medley over rice or noodles as a vegetarian main course or as a side to meat or fish.
 

2 tbsp olive oil

1 onion, thinly sliced

2 courgettes, chopped

1 aubergine, sliced thickly then chopped roughly

2 tomatoes, chopped

2 garlic cloves, chopped

1 tbsp vegetarian friendly hard cheese, grated

Fresh parsley, chopped (optional as garnish)

In a large deep frying pan over a medium heat, warm the olive oil and cook onion until soft.

Add the courgettes, tomatoes and garlic then simmer uncovered for 8 to 10 minutes over low heat until vegetables are soft.

Season with salt and pepper, stir in cheese and sprinkle with fresh parsley if using.

Serve hot.
