Courgette, cucumber and mint salad

Packed with antioxidants, a colourful salad adds to the BBQ brilliantly.
1 tbsp olive oil
3 courgettes, cut into ribbons using a vegetable peeler
1 large cucumber, cut into ribbons using a vegetable peeler
Small handful mint leaves, roughly torn
For the dressing
1 tbsp white wine vinegar
1 tsp Dijon mustard
1 tbsp mayonnaise
2 tbsp olive oil
Using a griddle pan, heat the olive oil then add the strips of courgette and cook until lightly charred, about 5 minutes, stirring or tossing while cooking.
Remove from the heat.
Add the courgettes and cucumber in a serving bowl then add the mint.
Whisk together the vinegar, mustard and mayonnaise until smooth, then gradually whisk in the oil.
Add salt and pepper to taste then drizzle over the salad and mix well.
