Creamy mixed vegetable bake
Try this alternative creamy and delicious wholesome bake on the family with crème frâiche, mustard, and nutmeg.
 

400g Green Isle Country Mix Vegetables

1 vegetable stock cube

200g tub crème fraîche

1 tbsp wholegrain mustard

Generous grating nutmeg

2 slices stale bread, whizzed into crumbs

Preheat the oven to 200°C / 400°F / Gas mark 6.

Place Green Isle Country Mix Vegetables in large saucepan, cover with water then add the stock cube.

Cover, then bring up to the boil.

Cook until just tender but still have some crunch when using a fork to test.

Mix together the crème fraîche, mustard, and nutmeg along with salt and pepper.

Add the vegetables now and mix well.

Tip into an ovenproof dish, scatter with the breadcrumbs and bake for 30 minutes until golden and crisp on the top.
