Crispy bacon and tomato spaghetti

This easy family meal with crisp bacon and tomato with paprika based sauce is a great mid-week meal.
400g spaghetti
1 tbsp olive oil
120g smoked streaky bacon, sliced into matchsticks
1 onion, finely chopped
1 garlic clove, finely chopped
2 tsp sweet smoked paprika
2 x 400g tins chopped tomatoes
Grated parmesan, to serve (optional)
Bring a large pan of water to the boil and cook the spaghetti according to the instructions.
Meanwhile, heat the oil in a large non-stick frying pan and cook the bacon until just starting to crisp.
Stir in the onion and cook for another few minutes then add the garlic last topped with the smoked paprika, and cook for 1 minute more.
Pour in the chopped tomatoes, bring to the boil and cook for 5 minutes until thickened.
Stir the sauce from time to time during the cooking process.
Drain the pasta and toss in with the sauce and mix well to coat.
Serve with a generous grating of parmesan, if you like.
