Cucumber and fresh herb tea sandwiches

Cucumber and fresh herb tea sandwiches
Light and fresh, adored by all at a gathering and simple to make.
 

1 small cucumber, thinly sliced

200g soft cheese

½ small bunch mint, finely chopped

Small bunch chives, snipped

9 thin slices wholemeal bread, crusts removed

Lay the cucumber slices on kitchen paper to dry.

Mix the cheese, mint, some salt and pepper all together well either by hand or in a food processor.

Stir in most of the chives, then spread the cheese mixture over 6 slices of the bread.

Reserve 12 slices of the cucumber, and arrange the rest over the cheese.

Layer 2 slices of cucumber-topped bread, then top with a plain slice.

Repeat this twice more.

Cut each into 4 squares.

Serve the sandwiches with a side of cucumbers and sprinkle with any remaining chives to serve.
