Ham with asparagus toasties
Toasted sandwiches crammed with delicious ham and crisp asparagus are an impressive hit at a gathering.
 

24 asparagus (about 150g), trimmed at ends then halved

4 large slices quality ham, cut into thirds, or 6 smaller slices, halved

50g soft salted butter

Squeeze of lemon juice

12 slices of wholemeal bread

Cook the asparagus for 1-2 minutes in boiling salted water.

Drain well on kitchen paper.

Using 4 asparagus for each portion, roll these up in a slice of ham.

Mash the butter with some black pepper and the lemon juice in a pestle and mortar.

Spread the slices of bread with a little of the lemon butter, then add an asparagus and ham wrap to each 2 slice portion and fry in batches in a non-stick pan light greased with a little oil on kitchen paper.

Press down gently on the sandwiches as they cook.

Flip to lightly brown the other side.

Cut the sandwiches in half and serve.
