David Gillick's Turkey & Spinach Sandwich

150g turkey
Good handful of spinach
50g feta

½ avocado
Tomato purée
Garlic purée
Mixed salad leaves
Fresh basil
Mixed peppers
Coconut oil

Salt and pepper

1 Sandwich Thin

Heat pan with coconut oil.

Add mixed diced peppers, 1 pepper in total per person.

Leave for 2/3 mins

Add chopped turkey breast

Brown off turkey breast and add a good squeeze of tomato and garlic purée.

Add half a cup of water and mix.

Leave for 1min, then add handful of spinach and mix.

Add salt and pepper to taste.

Place mixture on Sandwich Thins and add feta cheese and chopped avocado.
