Easy chickpea burgers

400g tin of chickpeas, drained
Zest 1 lemon, plus juice ½
1 tsp ground cumin
Small bunch coriander, chopped
1 egg
1 medium red onion, ½ diced and ½ sliced
1 tbsp olive oil
4 wholemeal buns
1 large tomato, sliced
1 cucumber, sliced
Chilli sauce, to serve
Blitz the chickpeas, lemon zest, lemon juice, cumin, coriander, egg and salt and pepper together in a food processor. Spoon the mix into a bowl with 80g of breadcrumbs and chopped onions. Press into patties and cover in breadcrumbs. Transfer to the fridge to cool for 10 minutes. Add a little oil to a frying pan over medium high heat and when hot add the burgers. Fry for about 4 minutes on each side and serve each burger on a wholemeal bun with a slice of tomato, cucumber, red onion and a generous drizzling of chilli sauce.
