Easy vegetable soup
 A quick and easy soup perfect for after school. 

1 tbsp butter

1 onion, diced

2 cloves garlic

3 carrots, peeled and sliced

3 sticks celery, sliced

1 parsnip, peeled and diced

1 courgette, finely sliced

2L of vegetable, beef or chicken stock

1 tin of chopped tomatoes

Salt and pepper to taste

In a large saucepan, melt butter and add onion and garlic. Fry until softened.

Add the carrots, celery, parsnip and courgette and fry for 5 minutes.

Pour in the stock and the tinned tomatoes and bring to the boil.

Simmer for approximately 10 minutes in a low heat until the vegetables are cooked.

Add salt and pepper if required
