Feta with spinach falafels

Feta with spinach falafels
Simple, delicious canapés perfect for sharing with family and friends.
 

200g baby spinach

400g can drained chickpeas

100g Eridanous feta cheese

2 tsp cumin

100g plain flour

Vegetable oil, for frying

Eridanous Tzatziki dip, to serve

Pour a kettle of boiling water over the baby spinach in a colander.

When cool enough to handle, press out excess water a few times to ensure dryness.

Pulse in a food processor with drained chickpeas, feta, cumin and plain flour until just combined.

Roll into walnut-sized balls with generously floured hands, then flatten into patties.

Fry in batches in vegetable oil for 2-3 minutes each side, then leave to cool.

Serve with tzatziki and a sprinkle of fresh parsley if you like.
