French toast with raspberries and vanilla

Look no further than this family favourite!
For the French toast:
1 brioche or milk pan
4 free-range eggs
250ml milk
250ml heavy cream
a pinch of nutmeg
a pinch of cinnamon
200g sugar
3oz bourbon
For the raspberry-vanilla compote:
200g raspberries
100g sugar
100ml water
1 vanilla pod
For the French toast, mix all the ingredients together, slice the bread and dip into the mixture, pan fry in a non-stick pan using a little butter. Cook on both sides for a couple of minutes until golden brown.
To make the compote, place all ingredients into a saucepan and bring to a boil, reduce heat and cook for a couple of minutes and taste for sweetness - add a little more sugar if necessary.
Dust with a little icing sugar before serving as is or with a dollop of natural yoghurt.
