Fruit trifles

Trifles are so lovely to make and look gorgeous at the table, you can use any fruits you like.
25g crunchy amaretti biscuits
140g Madeira loaf cake
225g mixed fresh berries
200g cherry compote or jam
300g custard
300ml double cream
3 tbsp toasted flaked almonds
Fresh mint, garnish
Use a food processor to roughly crumble the biscuits and the cake.
Divide between 8 small glasses.
Halve the fruits and divide between the trifles, then top with compote or jam.
Beat together the custard and cream, then dollop on top.
Scatter over the almonds, add a berries to each trifle and chill until ready to serve.
